Understanding French truffle supply in Korea
French truffles, particularly Tuber melanosporum from Périgord, are recognized worldwide for their dense aromatic profile and culinary versatility. The French truffle terroir, soil composition, and traditional harvesting methods produce a different sensory profile from the Italian Alba white truffle (Tuber magnatum). For Korean professional kitchens, this means access to a different aromatic palette suited to French and modern fusion cuisine.
Tuber melanosporum: peak season from mid-December to mid-March. Tuber aestivum: May to August. Tuber uncinatum (autumn truffle): September to January, with a more developed aroma than summer truffle. Year-round access is maintained through truffle juice (200g and 1.5kg formats) and processed products direct from French producers.
All Lyon Délice imports comply with Korean MFDS regulations and cold chain requirements. Fresh truffles travel by air from France to Incheon, with controlled temperature throughout. Documentation includes phytosanitary certificate, certificate of origin, and import food declaration.
